If you’re after a lean steak, Txuleta isn’t the one for you. With its high fat content, it’s packed with flavour!
Txuleta (pronounced ‘chuleta’) means ‘meat chop’ and is a speciality from the Basque region of Spain. Although the cattle are traditionally raised in Galicia, further along Spain’s northern coast, these cattle, with their distinctive blond coats, are fed a strict diet of high-quality grass for about 15 years, which enhances the meat’s flavour and creates the beautiful marbling effect.
